I'm thinking about adding nitrogen as my primary air source on my 300. My question is, right now I have a 5 gallon tank being filled by 2 AZ comps, could I just add a nitrogen tank regulated to 200 psi and plumb it into my 5 gallon tank and leave the AZ comps as they are on a 165-200 pressure switch so they will come on if pressure in the tank ever drops below 165 psi?

You sure could, I have a nitrogen tank worked into my existing system. I have a 3/4 horsepower compressor filling a 8 gallon tank and just ran the line from the nitrogen bottle right into the air tank. Just make sure you have a good check valve (like from suicide doors) after the compressors before the tank and after the nitrogen bottle before the tank.
