the hood isnt the issue, its the wiper cowl thats the problem. the 350 is a nice swap, its cheap, fits good and parts are readily available plus you can run maunal gauges like a speedo and tach which allow you to ditch the factory rear end for something like a for 9" from a older f-150 which is 4" narrower already with the same bolt pattern. Either way it sucks but if it were my ram i would build a sfbd frame with out all the stupid bends like the factory one has and at the same time make a new front suspension for it that gets less camber and tow issues throughout its travel i would also build new motor mounts to hold either a 350 or my prefrence a ls6 mated with a F.A.S.T setup *boner*. the hard part is going to be keeping wipers because of the position of the arms in relation to the rop of the air cleaner, if you pull off the black trim piece you can see what i mean because the intake is like 1-2" from the cowl and to bd it to the rockers is like 3.75 i believe but im not 100% sure.
