Are there any tips on how people pull a perfectly straight line when pinstriping out graphics or flames? I just can't seem to do it without making the line to fat, thin or jagged.

How long have you been working at it? There's a ton of variables it could be, your brush could be not loaded properly, you could just have a shakey hand, maybe you are holding it in a way that does not work for you?
post some pics maybe of what your lines look like and the problem area

some may call it cheating, but get some fine line vinyl tape, and lay it along your flame/graphic and leave a small gap between the edge of the tape and the graphic.

also your brush.
if your using a cheapo brush that has alot ot do with it, i soetimes cut hairs out of my brush to give me a finer "blade" to work with. mostly i just hire a striper to come do my stuff. if you use the same guy a few times they get cheaper once they know you and they can give you tips on laying your flames to help them make it easier to stripe.
