I am currently building a 66 GMC longbed 3/4 ton. My queston is if a Johnny Joint(super pivot) with a 3/4 stud will be strong enough for my application? I plan on running my bags on the lower bars. I also plan to use 2x2 bars, and was wondering what wall thickness to use. It would be great if these joints would work as I have them laying around, but if its not safe then I definately would not use them. Thanks for any help you can give.

The 3/4" shaft will probably live for a while, but I think that it's a touch too small for comfort. I would suggest 7/8" stud or cut the stud off and weld the sleeve to your bar.   Considering that the vehicle is a 3/4 ton, I would say that 2x2x .250 would be the best.
