My two cents, v6's are drop-in fits, no cutting required. Build it before install for desired horses and r.p.m. range. GM does have v8 stoke length v6's for the torque as below:
Your v8 modifications will have to be in front of the engine, or figure out another method of heat and a/c. Heater core is dead center of the firewall, against the firewall.
