when i did mine i found it relativley easy, as long as your a little bit mechanicly inclined and know what to look for. i did learn alot of things the hard way tho while doing it. like building bracets that take all day to make to find out you actually dont need them or its not right. i also bought alot of shit that i found out was wrong. i picked up my 91 5.0 H.O EFI put of a stang for only $500 canadian. then i modded it alot. like changing the efi to carb and did internal work. i think the funnest thing i encounterd while doing mine was trying to explain to the perts store whast i need parts for. haha. cuz they always ask what car/engine its for. so i had to say "well its a mazda b2200 with a 91 mustang 302 that is converted to carburated not efi" and they would sorta look at me like wtf for a second till i explained more about it. anyways good luck on the 351 convo. if you have any questions dont hesitate to email me and ask, or post here. heres a pic of my conversion:
