How have you guys removed the stock decals all over the sides without destroying the paint?

Try a heat gun.
Don't sit too long in one spot!

This works well.

Yup the rubber eraser wheel works great!

I think ill try the heat gun first, eventually the paint is being redone anyway, so I'm not that concerned about it. I just want a quick cheap way to rid me of those horrific stock decals.

3M eraser wheel is the best. I remove badges from all my vehicles. It's a real thumb saver trying to remove that double sides tape. It would be so easy to remove the decals with that wheel.

3M wheels is faster than heat... I removed all my stripes in less than an hour.

If you're going to repaint, why worry about the stripes now?

I used heat to pull off all my rubber side mouldings but most of the double sided tape is still on there. Will the 3M wheel work for the old crusty double sided tape too? I'm a little worried about trying one of these wheels, I don't want to mess up the paint.

Yes it will work great! Just use a fast drill. Check YouTube for How-to videos.
I used it removing molding on my old S10 and have used it for the double sided foam tape on badges on several different vehicles, including my 2011 Sierra. You won't hurt the paint.
