I recently installed a weber carb. The truck wouldn't run so I had to get a pressure regulator. Once the regulator was installed with a new intake manifold gasket the truck was running great. Any way, I decided to take it for a test drive, about 2 miles down the road I noticed the temp was rising pretty fast. I stopped the truck immediately and popped the hood, It was smoking pretty good. Turns out I'm an idiot and forgot to fill coolant. After I added coolant and let it cool down it wouldn't fire, cranked just fine. Once I got the truck home I pulled the head thinking the head gasket was blown, there was coolant in the oil, But to me it doesn't look like there is any obvious spot where it had blown. checked the head for visible cracks and didn't see any. Any Ideas?

Rings compressed into piston grooves = 0 compression.

any way simple way to check it without pulling the block?

The pistons can be pushed out from the bottom without pulling the block. You also can see if the pistons are floating on the rings by pushing on the pistons to get a rough idea to see if they are stuck.

I replaced my pistons/rings and cylinder head while keeping the engine in the truck, see

I was hoping I wouldn't have to mess with the block or replace the head, but the more I look into it and think about it, seems like it might be the safest rout. Don't really feel like pulling it all apart again because I missed something

If there is coolant in the oil, that's not indicative of bad rings though, or am I wrong

Coolant in oil sounds like head gasket to me.... Just saying...

But it is a Mazda so It could use rings as well
