The v8's are simple if you go carbed because theres basically no wiring involved you'll just need to build new motor mounts, trans mount and a new driveshaft, etc.
The v6 could be carbed, or you can keep the FI, but you will have to swap all the wiring and ecm's from the donor vehicle which can be a pain and time consuming and you'll need all the mounts and such like in the v8 swaps.
The fe3 is a bolt in swap, you can use all the stock mounts, transmission, driveshaft, but theres alot of wiring involved to make it run. The f2t is about the same, but takes some thinking because the distributor among other things face the firewall when used in the truck.
All depends on what you are comfortable with doing and what you want to end up with its finished.
