If it overheats while driving it has nothing to do with the fan or the clutch on the fan as the fan is only there to keep it cool while you're stopped (at lights or stuck in traffic).
With the thermostat I wouldn't remove it as that will cause overheating sometimes too, (and it takes forever to warm up), the best thing to do if you do want to mess with the thermostat is pull it out, smash out the centre part and put the casing back in, this slows down the water flow enough to stop overheating and will tell you if it is indeed that causing you your issues.
If it was me I would get a new thermostat, top and bottom radiator hose, bypass hose, radiator flush and antifreeze/rust inhibitor and start again.
Put your radiator flush in, run it 'till warm then wait 'till it's cool and drain, change your hoses, (but do not put onto the radiator yet), remove thermostat and leave the housing off for now, hook up your garden hose to the heater inlet hose and turn it on SLOWLY and flush out all the gunk that's built up inside,do this to the bypass hose too (if you have one), reattach the heater and bypass hose then flush from the thermostat housing back down through the bottom radiator hose, insert new thermostat (remembering to put the tab at the top) and put housing back on, flush the radiator from the top down and once clean reattach the bottom radiator hose.
This should remove pretty much all the crud inside your engine, refill and purge air from your system and you should be good to go.
P.S. You did bleed out all the air after you changed the pump didn't you?
