As SinCityLocal stated......FIRST check to make sure the throttle cable has some slack in it and is not keeping the throttle cracked opened.
Did you use a new intake manifold gasket? Or was the intake never separated from the cyl. head?
Did you do anything to the carb while you had the truck down?
Does the truck have the stock carb on it? Or has it been replaced by a Weber carb?
There is a High Idle screw on the stock carburetor (as well as the Weber) but if you didn't mess with any carb adjustments before the HG change, and it ran fine before that, then you probably have a vacuum leak somewhere. Might be a vacuum hose you didn't connect back up (look real good!) or the intake to head area has a leak, or if the carb was removed from the intake, then that area could be leaking.
Spray some carb cleaner around those areas and if you get a change in idle, then the area you were spraying when it changes is where you need to look closely at.

BUT, don't go turning screws until your sure you don't have a vacuum leak!!!
