I guess it depends what you mean by difficult. You can make almost any engine fit if you really want to. Mitsubishi makes the 6G72 (3.0 liter) and the 6G74 (3.5 liter) engines. These maybe your easiest V6 swaps.
The following may help you narrow down your choices:
1. How much horsepower and torque do you want? Do you really need a V6 or V8 to achieve your goal?
2. Do you want a automatic or manual transmission? You may have to enlarge the transmission tunnel for a bigger transmission. I assume you already know what rear wheel drive transmission will bolt to your new engine.
Other considerations:
1. With a v6 and/or a v8, fabrication of engine and transmission mounts, transmission shifter location and changing the length of the drive shaft maybe required.
2. Do you want fuel injection? Then you need the engine wiring harness, ECU, different fuel pump and fuel lines.
3. With a v6 or a v8, you need to route the driver's side exhaust to the passenger side away from the gas tank. Make sure the oil pan will clear the front cross member.
4. With a v8, water pump to radiator clearance not give you much room to move the engine forward and the firewall will not provide much room to move the engine backwards. It may also require an electric radiator fan and a bigger alternator to run it.
