overheating!!!!

86mazdawg ex-cab. well. i replaced the head gasket,wires,plugs,hoes for radiator,and other hoses for heater curculation, but i have no thormastate. and im running pure water through out the engine. it overheats and like a bubbling sound with steam shooting in to the waste water bottle near the engine. please help me!!!!!!
