Whatever your expected budget is for the project, triple it. My dad just opened up a store in the same line of business, and went way over. Was looking at a $350K total price, and wound up just over 1 million in total for opening. (this is CA cost, so opening a business in NC probably won't cost that much). Also expect delays. If you expect 6 months more than what you are told, you won't be royally disappointed. You are also going to need to know that January and September are very slow months, and February, and December are extremely busy.

And hire more employees than you need before you open. You will likely loose 1/3 of them within the first month.

The dairy bar that i work at is kind of set in the 50s. black and red booths, white and black tiled floor, and has elvis everywhere.. i will try to get some pics sometime. deffinatly plan to spend more then what is planned and be prepared to go through workers. i have personally fired 2 people in the last month and 3 have quite because they cant handle the pressure when it gets busy.

There was a 50's themed diner where I live in West, Tn called "Gunther Toodies". It was built brand new from the ground up and it was obvious somebody sank a lot of money into it. It lasted just over a year before going out of business.

There is an old dinner/drive thru like that here in St. Pete, fl. It hosts a classic car night as well. It is very busy on car night(only night I go) lots of cars, and the dinner/bar is always packed. I'm sure they are still busy during the week as well(they do a classic bike night as well).
