seth, i was pretty sure that it wasnt the cat, but others explinations did make sense. i still say you have a vacuum leak. i would be check with a propane torch or with carb cleaner. i would almost bet it is on the bottom side of the intake. they leak alot there. if you have any vacuum caps plug them one by one and see if you can find it. if there are already caps there remove them and just your finger to see if anything changes.

How do you check for leaks with propane or carb clean?

Also, I can't really do anything while its running, because I am the only one here, basically all the time. It won't idle enough to stay alive.

Use a propane torch, but don't light it. Turn it to the on position and move it around the areas in which a vacuum leak could be, and when you get close to it the idle speed should increase.

you use carb cleaner by spraying it around the ports and around the gaskets. with a pretty painted head though i would suggest the torch and lucky explained how to do that. as for a head gasket, no there doesnt have to be a seep of either oil or water mixing it can be a blown spot between two cylinders but i dont think that is it personally. almost out of post so just im me if you need help.

Didn't find any leaks anywhere on the intake, or the base of the carb.

You know this may sound dumb but a lot of head gaskets can be installed upside down I did it once on a mazda and it ran just ran like crap sometimes do you think you may have flipped when you rebuilt the motor? On a mazda the only things that don't line up is a water port and a few little oil ports. Just a thought or you know it could be a crossed vacuum line so it wouldn't show a leak but still mess with the carb.

What about the distributor??? My dads car did the same things your truck is doing and i checked everything i took off the exhaust checked injectors O2 sensors plugs wires everything and it ended up being the pick-up or the points in side the distributor. His car did everything rough idle smoothed out with higher RPMs had the black stuff coming out of the exhaust and all.
