The only major thing that it would affect is roll-steer. The bars would need to be triangulated in opposite directions otherwise you COULD still need to run a pannard bar even though they are triangulated. On a Satchell link, where the lower bars are triangulated, you would still want to triangulate the upper bars a bit in order to dial in a bit of roll-understeer. I am sure in some cases that the off-road guys do it for the same reason, but keep in mind that not every off-road guy understands all of the dynamics that are going on and just build a truck that works cause they've seen it done that way before.
For most of you, worrying about roll-steer and roll-centers is not a concern at all. If you stick close to my suggestion of keepings the bars near parallel to the ground a half travel and running the instant center around the front of the vehicle, you will have very little to worry about reguardless how the bars are triangulated.
