i've got one 12 behind my seat for now. i have a Kicker CompVT 12 in the kicker enclosure that it came with and my seat still goes all the way back.

This is my set up from a long time ago. Sealed wedge box w/ 2 kicker 12" . it was calculted at 2 cu ft. A little small for these 2 12" but it hit pretty well. I stuffed it with poly fiber fill (sytenthic stuffing from a craft store)

In a std cab,a bench seat is better to have subs with because the back of the seat is hollow, unlike the buckets, which ill rub up against the box depending on the size and not allow you to slide the seats all the way back.
