(2) Water always comes out the exhaust, as burning gasoline produces mostly water and carbon dioxide. When the exhaust system is cold (for the first few minutes), it's not hot enough for the water vapor to remain as a fas, so it condenses to form liquid water. After a few minutes (and aren't you in Canada?) it should be warmed up enough to where you don't see liquid water any longer. Now, coolant (the ethylene glycol) is less volatile, and will not vaporize as easily, so if one has a bad head gasket or head causing coolant to get into the combustion chambers, that would still be observed.
